Locust bean gum or Carob bean gum is a galactomannan vegetable gum extracted from the seeds of the Carob tree. It is used as a thickening agent and gelling agent in food technology. It is soluble in hot water.Locust Bean Gum occurs as a white to yellow-white powder. It consists chiefly of high molecular weight hydrocolloidal polysaccharide, composed of galactose and mannose units combined through glycosidic linkages, which may be described chemically as galactomannan. It is dispersible in either hot or cold water, forming a sol having a pH between 5.4 and 7.0, which may be converted to a gel by the addition of small amounts of sodium borate. Its main function is as a stabilizer and thickener. Locust bean gum has an E number of E410. It is used as a thickening agent (gelling agent) in food technology. The bean, when made into powder, is sweet, with a flavor similar to chocolate and is used to sweeten foods and as a chocolate substitute. It is also used in pet foods and inedible products such as mining products, paper making, and to thicken textiles. It is used in cosmetics and to enhance the flavor of cigarettes. Shoe polish and insecticides also have locust bean gum powder as an additive. It is soluble in hot water.

REQUIREMENTS
Locust (Carob) Bean Gum occurs as a white to yellow-white powder. It is obtained from the ground endosperms of Ceratonia siliqua (L.) Taub. (Fam. Leguminosae). It consists chiefly of a high-molecular-weight hydrocolloidal polysaccharide, composed of galactose and mannose units combined through glycosidic linkages, which may be described chemically as a galactomannan. It is dispersible in either hot or cold water, forming a sol having a pH between 5.4 and 7.0, which may be converted to a gel by the addition of small amounts of sodium borate.
Function: Stabilizer; thickener.
Identification:
A. Transfer a 2-g sample into a 400-mL beaker, moisten it with about 4 mL of isopropyl alcohol, while vigorously stirring add 200 mL of cold water, and continue stirring until the gum is uniformly dispersed. An opalescent, slightly viscous solution forms. Save this solution for Identification Test B.
B. Transfer 100 mL of the solution prepared in Identification Test A into another 400-mL beaker, heat the mixture in a boiling water bath for about 10 min, and then cool to room temperature. The viscosity of the solution increases appreciably (distinction from guar gum).
Acid-Insoluble Matter: Not more than 4.0%.
Arsenic: Not more than 3 mg/kg.
Ash (Total): Not more than 1.2%.
Galactomannans: Not less than 75.0%.
Lead: Not more than 5 mg/kg.
Loss on Drying: Not more than 14.0%.
Protein: Not more than 7.0%.
